
Oatmeal with Banana and Peanut Butter

Delicious oatmeal with banana, peanut butter and flax seeds! The ultimate healthy and nutritious breakfast. It is done only in 5'. This oatmeal will keep you full till your mid morning snack plus it tastes amazing if you are lover of the combination banana with peanut butter (which I am!). Moreover it is a great breakfast or mid morning snack for your kids and especially for toddlers (if they do not have any peanut allergy) and a great introduction to oats with all their great benefits.
This oatmeal is one of mine and my son's favorite breakfasts! I learned the basic recipe (actually boiled milk with oat flakes) from a friend of mine and I enhanced it with my favorite combo, what else but banana and peanut butter! If you are also fan of this combination you will definitely love this quick and tasteful breakfast recipe. I add also flax seeds for a crunchy taste along with all health benefits of these little seeds (omega-3 fats, lignans and fiber).

Start by adding the milk and the oat flakes in a small pot and stir well. You can use any kind of milk you like. I usually use regular full fat or non fat milk, but sometimes I use almond milk. When using full fat milk you get a creamier and more rich oatmeal. Place the pot over medium heat and bring to boil stirring with a spoon constantly (the milk tends to stick on the bottom of the pot). As soon as the oatmeal starts to boil and have a creamy and thicker texture remove from heat and set aside. Do not let the oatmeal boil.
In a serving bowl add the peeled banana and mash it with a fork. You can mash it how much you like. I personally like it to get an almost puree texture with some small chunks.
Pour the boiled oatmeal in the bowl with the mashed banana and stir well with a spoon.
Add the peanut butter and mix well. Finally incorporate the flax seeds. Your banana peanut butter oatmeal is ready to serve and consume! It tastes better if you consume it warm (not hot), but still it tastes good when you consume at in room temperature.
If you want you can add extra banana slices and extra flax seeds to top your oatmeal! Enjoy!

1 cup milk, of your choice
1/2 cup oat flakes
1 banana, ripe for more flavor
1 tbsp peanut butter
2 tsp flax seeds
Instructions
Add the milk and the oat flakes in a small pot and stir well. Place the pot over medium heat and bring to boil stirring constantly. Once the oatmeal starts to boil and has a creamy and thick texture remove from heat and set aside.
In a serving bowl add the peeled banana and mash it with a fork, until you get the texture you like (puree or with some small chunks).
Add the oatmeal in the bowl with the mashed banana and stir well with a spoon.
Add the peanut butter and stir well.
Finally incorporate the flax seeds.
If you want top the oatmeal with extra banana slices and/or extra flax seeds. Your oatmeal is ready to serve! For better experience consume warm.
